Any Jo Muffins will do!

Time: 1 hour, 12 servings

INGREDIENTS:

  • 220g self raising flour (if non self raising flour then add 1 tsp baking powder)
  • 1/2 cup of olive oil
  • 3/4 cup of greek yogurt
  • 1/4 cup sugar
  • 1/4 cup honey
  • 1 egg – beaten
  • 1 tsp vanilla essence
  • 2 mashed banana (overly ripe are best)
  • 1 cup chopped strawberries
  • 1/2 cup blueberries
  • 1/2 cup chopped walnuts
  • 1/2 cup of seed (sesame, pumpkin, sunflower, flax)
  • 2 tbs ground flax seed
  • 1/2 cup jumbo organic oats
  • 1 tsp cinnamon

METHOD

Turn your oven to 180 degrees and grease proof your muffin tray. I tend to just use olive oil on a paper napkin and wipe each muffin case.

Add your dry ingredients to a bowl. In a separate bowl add the beaten egg, yogurt, honey, vanilla essence and olive oil. Add the mashed banana and the chopped strawberries along with the blueberries. Now pour this into the dry mix and stir well. Making sure you have mixed all the ingredients together. Turn out into your muffin tray, filling each muffin case 3/4 full.

Pop these into the oven for 25 – 30 minutes until the top is a lovely golden brown and the house is smelling delicious!

They do however come with a warning = you will find it hard to stop eating them!
